If you’ve followed me for any length of time, you know I’m a big fan of planning and preparing for the week ahead. To me, this means setting aside time one day (for me it’s Sunday) to review my upcoming week and prepare food that I can use for multiple meals.
This past Sunday, I spent about 1 1/2 hours in the kitchen. The end result was roasted vegetables I’ll use for sandwiches and sides; sweet potato/black bean filling that I’ll use for burritos at least twice (with extra for another meal); a whole lot of cut fruit for breakfast and snacks; and frozen overripe bananas to use in smoothies.
Come Monday, when all heck breaks loose in my schedule, at least I know that I have good food on-hand to make healthy eating easy.
