And he does it all while eating a vegan diet. Or as he likes to say: &#8220;plant-based&#8221; because to a lot of people &#8220;vegan&#8221; sounds like &#8220;crazy.&#8221;</p>
<p>I&#8217;ve read and re-read Scott Jurek&#8217;s story of how he transitioned to a vegan diet and dramatically increased his running success. This change itself is dramatic. He grew up hunting and fishing, eating whatever he caught. He was a devotee of McDonald&#8217;s. A favorite meal was grilled steaks, followed by Cheez Balls.</p>
<p>So what motivated him to change how he eats? <strong>He paid attention.</strong> He listened to his body and realized that when he ate mostly plants, he had more energy and could do more. His body recovered from injury more quickly. He educated himself and learned that even athletes could get the nutrition they need without relying on animal protein. And the proof is in the (vegan) pudding.</p>
<p>I am not a vegan. There are four things stopping me: regular milk in my morning coffee, the occasional slice of really good bacon, a farm-fresh egg &amp; some cheese. But you know what&#8217;s great? <strong>I don&#8217;t have to fit a label.</strong> I know that if I eat a mostly plant-based diet with the occasional animal product thrown in, I&#8217;m doing my body a huge favor. I don&#8217;t have aches &amp; pains in the morning. My weight naturally monitors itself. My cholesterol, glucose &amp; blood pressure are all in the really healthy range. And I feel nourished.</p>
<p><strong>You don&#8217;t have to fit a label either.</strong> Simply incorporate more plants (vegetables, fruits, nuts, seeds, whole grains) in your diet. One night a week, substitute beans or portabello mushrooms for meat. Then try a second night. Every little change you make is money in the bank, so stockpile it. Even if you&#8217;re not a athlete, you will feel better and be healthier.</p>
<p>Just ask Scott Jurek. But you may have to wait a bit for him to come back from his run.</p>
