Veggies On My Doorstep

Today was another CSA delivery and I’m still trying to get used to accommodating vegetables showing up on my doorstep. It’s a little challenging to use them since we don’t get to choose what arrives, but that’s also part of the fun. Although this week I did mutter to myself “Really? Cabbage again?”

This week’s delivery includes tomatoes, peppers, the aforementioned cabbage, garlic, onions, arugula, potatoes, one eggplant and thyme. It’s easy to plow through the tomatoes and arugula; we eat an arugula salad nearly every day.

For dinner tonight, I think we’ll grill flank steak marinated in equal parts soy sauce and pineapple juice. To complement this slightly sweet dish, I’ll saute the cabbage with sliced onion and apples. I’ll also cut the potatoes into steak fries, spray them with olive oil, toss them with thyme and rosemary (from last week’s delivery) and bake them into crispy wedges. At the same time I’ll roast the garlic to use as a bread spread.

While we’re grilling the steak, we’ll grill the peppers and eggplant. These will come in handy for a quick lunch over salad greens or tucked into a wrap with some store-bought hummus.
